Berries with White Chocolate Amaretto Sauce

You can use fresh berries for this in the summer or use frozen berries available from the grocery store in the freezer section all year long. This makes a refreshing dessert in both summer and winter.

Ingredients:

  • ½ pint fresh raspberries
  • ½ pint fresh blueberries
  • ½ pint fresh strawberries, thickly sliced
  • ½ cup heavy cream
  • 5 oz white chocolate chopped or grated
  • 1 tbsp Amaretto liqueur
  • Clean and dry the fresh berries. Cut off the tops of the strawberries and thickly slice. Spread all of the berries out on a cookie sheet in a single layer to prevent sticking together, and lay it in the freezer. Freeze just until the berries frozen. Cover with plastic wrap or place in a freezer bag until ready to make the dessert.

    When ready to make the sauce, take the berries out of the freezer and place in sundae dishes, sit on counter to slightly defrost while you prepare sauce.

    Combine the cream, chopped white chocolate, and Amaretto in the top of a double boiler or heat safe bowl. Fill a saucepan ¼ way up with water and bring to a boil. Reduce heat to a simmer and place the double boiler or bowl over the pan and heat until white chocolate melts, stirring often until combined and sauce is warm, but not too hot.

    Pour the warm chocolate sauce over the berries and serve immediately. Garnish with fresh mint leaves.
