Cheese Tortellini Soup

This soup is not only delicious but it is light and nutritious as well. It makes a great lunch or dinner to warm you up in the winter.

Ingredients:

  • 4 cups chicken broth
  • ½ cup dry red (or white) wine
  • 1 can (14.5 oz) Italian style stewed tomatoes
  • 2 cups of pre-washed baby spinach leaves
  • ½ cup fresh basil leaves
  • Salt & pepper
  • 1 (9 oz) package of refrigerated tortellini
  • Freshly grated Parmesan cheese
  • Directions:

    Combine broth, wine and stewed tomatoes in a large pot or Dutch oven and bring to a boil.

    Add the tortellini and cook approximately 5 – 7 minutes – follow cook time on package.

    Add the spinach and basil leaves to the pot and cover. Remove the pot from the heat and let stand for 2 minutes or until the leaves have wilted.

    Pour soup into bowls and top with freshly grated Parmesan cheese.
