Crockpot Minestrone


Slow-cookers are excellent for soups because you can let them simmer all day unattended. For this recipe you will need to add some of the ingredients towards the end of the cooking time for best results, but most of the cooking can be done during the day while you are busy with other things.

Ingredients:

  • 1 pound beef stew meat, lean
  • 2 cups water
  • 4 cups beef stock or 1 - 32oz carton beef broth
  • 1 28-ounce can crushed tomatoes with liquid
  • 1 onion, chopped
  • 2 carrots diced
  • 2 tablespoons dried parsley, minced
  • 2 tablespoon dried Italian seasoning
  • 1/2 teaspoon ground sage
  • salt & pepper
  • 1 16-ounce can garbanzo, cannellini or great northern beans white beans - do not drain liquid
  • 1 zucchini, thinly sliced
  • 2 cups cabbage, finely chopped
  • 1 cup ditalini or any small, dried pasta
  • 1/4 cup Parmesan cheese, freshly grated
  • Combine first 10 ingedients in a crockpot - at least 5 quart size. Cover and cook on low 6-7 hours.

    Turn crockpot to high and add the beans, zuchinni, cabbage and ditalini and turn the crockpot to high heat. Cook for 45 minutes - 1 hour until the pasta is cooked and meat is tender.

    Sprinkle individual servings with Parmesan cheese or a dollop of pesto if you have some and serve hot.
