Crockpot Sausage and Peppers

Sausage and peppers cook nicely in a crockpot and the prepping for this takes on a few minutes. Set up your pot in the morning and let it slow-cook all day until you are ready for dinner.

Ingredients:

  • 2 tablespoons olive oil
  • 2 lb package of Italian sausage – hot or sweet
  • 3 garlic cloves, crushed and peeled
  • 1 onion cut into large pieces
  • 3 bell peppers – try an assortment of green, red and yellow peppers
  • ½ tablespoon dried thyme
  • ½ tablespoon dried oregano
  • 1 tablespoon olive oil
  • 1 – 14.5 oz can of Italian diced tomatoes – do not drain
  • 1/3 cup dry red wine Directions:

    Smash the garlic cloves with the side of a large knife to crush and peel them. Cut the onion into large slices and chop the bell peppers into large pieces – about 1 inch.

    Heat the olive oil in a large skillet over medium-high heat and brown the sausages, turning occasionally to brown on all sides, about 5 minutes.

    Place the chopped vegetables in the bottom of the crockpot and pour in the wine. Add the dried spices and crushed garlic cloves. Pour in the canned tomatoes with the juice.

    Place the browned sausages on top of the vegetables and cover. Cook on low heat for 6 hours.
