Farfalle with Summer Squash

Farfalle with Summer Squash is a great way to enjoy wonderful, fresh summer squash and herbs. This can make a nice meal itself, or a side dish with a meat of your choice. This recipe is taste wonderful with your own home grown herbs. If you have not tried growing herbs, you will be surprised how easy it is and how much of a difference fresh herbs make in your recipes.

Ingredients:

  • 1 cup thinly sliced zucchini
  • 1 cup thinly sliced yellow squash
  • 3 garlic cloves minced
  • 2 tablespoons olive oil
  • 16 oz. package of Farfalle (bow-tie)
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon fresh oregano or marjoram
  • 10 large basil leaves, chiffonade
  • ¼ cup Parmesan cheese, freshly grated
  • Boil the pasta in a large pasta pot until al dente.

    While the pasta is boiling, slice the squash into thin slices and mince the garlic. Heat the olive oil in a large skillet and add the minced garlic. Saute the garlic for 30 seconds stiring constantly, then add the squash. Saute until tender, stirring frequently. When the squash is almost tender add the fresh thyme and oregano and turn the heat down to low. Chiffonade the basil and grate the Parmesan, set aside.

    Drain the pasta add to your skillet. Toss with the vegetables to thoroughly mix. Pour into a serving dish and top with the Parmesan and basil shreds.

    Serve immediately.
