Fast Marinara Sauce

Simmering sauces for a while intensifies the flavors of the vegetables and herbs, but this sauce is pretty good for a quick sauce when you don't have time to slow simmer.

Yield: 5 1⁄2 cups

Prep Time: 10 min

Ingredients:
  • 1 Tbsp olive oil
  • 1 medium onion, chopped
  • 2 tsp minced garlic
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14.5 oz) diced tomatoes
  • ½ tsp dried Italian seasoning
  • ½ tsp dried oregano or marjoram
  • ½ tsp dried basil
  • ¼ tsp sugar
  • Dash of salt and pepper
  • Directions:

    Heat the olive oil in a large saucepan. Add the onions and saute just until tender and translucent. Add the garlic and saute for 1 minute stirring frequently to prevent the garlic from burning.

    Stir in remaining ingredients, then turn the heat down and simmer, uncovered for 6 minutes.

    The sauce will stay good in your refrigerator for up to a week or freeze half for a future meal.
