Fast Pepperoni Calzones

These fast pepperoni calzones are a great choice for a fast dinner when you really don't feel like cooking. It may not taste as good as all fresh, but using store bought canned pizza crust and frozen vegetables will save you a great deal of time.

Yield: 4 Calzones

Ingredients:

  • 1 can (10 oz) refrigerated pizza crust
  • 1 cup shredded mozzarella cheese
  • 32 slices pepperoni (from a 3.5-oz pkg)
  • 1 cup part-skim ricotta cheese or cottage cheese
  • 1 cup frozen bell pepper and onions, thawed
  • Heat oven to 425°F. Coat a baking sheet with cooking spray.

    Unroll the pizza crust on a cutting board, and stretch dough into a 12 inch square. Divide the dough into 4 quarters - giving you four 6 inch squares.

    Put the toppings on only one half of each square, leaving the other half to fold over. Top each square with 1/8 cup of the mozzarella, 8 slices pepperoni, 1/4 cup ricotta, and 1/4 cup pepper mixture, then top with the remaining mozzarella cheese. Leave about a 1/2 inch border on the edge for sealing.

    Fold one side of dough over the filling and pinch the dough edges together. Press edges together with the flat edge of a fork to seal. Place on the prepared baking sheet and cut a few very small slits in top with sharp knife for steam to escape.

    Bake 10 to 12 minutes until golden. These can be done in a toaster oven as well. Cover with a loose layer of tin foil over the top half way through baking to prevent the tops from burning.
