Fifteen Minute Lasagna

I adapted this Fifteen Minute Lasagna recipe from many quick "Ladle-on Lasagna" recipes I have seen. I love lasagna but don't always have the time to make it, so this recipe allows me to enjoy the flavor without the work. It's not as good as traditional lasagna, but is pretty good for how fast you can prepare it. I like to make sure my mozzarella cheese is melted, therefore I heat it before adding the sauce. The key to this dish is to make sure your tomato sauce if very hot before you pour it on the pasta.

  • 4 cups of spaghetti sauce with meat
  • 12 oz mafalda pasta – or break regular lasagna noodles into one inch pieces
  • 1 ¼ cup lowfat ricotta cheese
  • ¾ cup shredded mozzarella
  • 2 tablespoons fresh Italian parsley, chopped
  • 2 tablespoons freshly grated Parmesan
  • Boil the pasta in a large pasta pot. Pasta will cook for about 15 minutes.

    While the pasta is boiling, mix the ricotta, mozzarella and fresh parsley together in a bowl. Grate the Parmesan and set aside.

    In a saucepan, heat the spaghetti sauce until very hot. Partially cover with a lid to prevent splatters.

    When the pasta is almost done, heat the ricotta cheese mixture in the microwave for about 30 seconds – depending upon how powerful your microwave is. It should be heated through and the mozzarella just melted, but don't over-cook.

    Drain the pasta well, then spoon onto individual plates. Top each pasta plate with some of the melted ricotta cheese mixture. Pour the hot spaghetti sauce on top of the cheese and sprinkle with the grated Parmesan.

    That's it, it is ready to serve.
