Garlic Pasta

Garlic Pasta can be a nice change to traditional plain pasta. The roasted garlic is not too strong but adds a nice flavor to your homemade pasta. If you don't have any roasted garlic you can make this pasta with store bought garlic, but home roasted garlic will give you the best flavor.


Ingredients:

  • 2 cups of unbleached flour
  • 1/2 cup roasted garlic
  • 1 tsp salt in a bowl
  • 1 tablespoon olive oil
  • 1 tsp water
  • 2 eggs
  • Preparing your pasta dough:

    Pour the flour in a large mixing bowl and a well in the center. Add the eggs, salt, olive oil, roasted garlic and water into the well. Beat the eggs and garlic mixture with a fork until blended and gradually pull in flour around the edges of the well until you have a soft, sticky dough ball.

    Dump the dough ball onto a floured surface and knead, incorporating more flour into the dough as needed, until the dough is smooth, elastic, even in color and no longer sticky.

    Once you have finished kneading, wrap the dough in plastic wrap and let rest at room temperature for 30-60 minutes.
