Herb Crusted Flounder

This is an easy recipe and you can use any thin white fish you prefer. The herb and cheese give these fish fillets a light, flavorful crust that everyone will enjoy.

Ingredients:

  • 4 thin, boneless flounder fillets
  • ½ cup Italian flavored breadcrumbs
  • 2 tablespoons freshly grated Parmesan cheese
  • 1 tablespoon chopped fresh flat-leaf parsley
  • ½ teaspoon Italian seasoning
  • 2 garlic cloves, finely chopped
  • freshly ground pepper
  • 1 tablespoon extra virgin olive oil
  • Preheat to 400°F. Lightly coat a 9 x 13 inch baking dish with olive oil or olive oil cooking spray.

    Place the fish fillets in the baking dish and fold the ends of each fillet under to meet in the center. Folding thin fillets of fish prevents them from overcooking.

    Combine the breadcrumbs, Parmesan cheese, parsley, Italian seasoning, garlic and pepper in a small bowl. Mix in 2 teaspoons of olive oil to moisten the crumbs. Spread the bread crumb mixture evenly on the top of the fillets. Drizzle the crumbs with the remaining olive oil.

    Bake fish until it is opaque and flake easily with a fork. The topping should be a nice golden brown, approximately 15 minutes.

    Transfer fish to a platter and serve immediately.
