Italian Baked Fish

This recipe is an American invention as the Italians rarely combine fish with cheese, but even those who don’t like fish may give this one a try.

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 tsp Italian seasoning
  • 1 14oz can Italian stewed tomatoes
  • 1 - lb white fish – cod, haddock, tilapia
  • 1 cup grated mozzarella
  • ¼ cup grated Parmesan
  • Directions:

    Preheat oven to 350˚ F.

    Spray a 9 inch pan with olive oil cooking spray.

    Heat the olive oil in a large saucepan over medium-high heat. Add the onions and sauté until tender. Stir in the tomatoes, Italian seasoning and salt & pepper. Simmer the tomatoes over medium heat for about 5 minutes, stirring frequently until it thickens to a sauce.

    Place the fish in the pan and pour sauce over the fish. Sprinkle the Parmesan cheese on top of the sauce and then cover with mozzarella.

    Bake for 20-25 minutes until the top is golden brown and the fish flakes easily.
