Italian Pasta Salad

This Italian Pasta Salad has a wonderful flavor and the combination of pasta, vegetables and meat will fill you up.

Ingredients:

  • ½ cup olive oil
  • ¼ cup white balsamic vinegar
  • 1 teaspoon dried Italian seasoning
  • salt & freshly ground pepper
  • 12 oz dried rotini or any pasta
  • 4 oz Italian salami, quartered
  • 1 pint grape or cherry tomatoes cut in half
  • 2 cups prewashed baby spinach
  • ¾ cup bottled giardeniera mix, drained, chopped
  • ½ cup olives, sliced
  • 2 tablespoons fresh basil, chopped
  • 8 oz fresh mozzarella cheese, cubed
  • Directions:

    Cook the pasta in a large pasta pot until al dente.

    Meanwhile, combine the olive oil, vinegar and Italian seasoning in a bowl and whisk together.

    Drain the giardeniera mix and chop to bite sized pieces. Chop the olives and cut the tomatoes in half, and the basil.

    Stack slices of the salami and cut into quarters. Cut the mozzarella cheese into bite sized cubes.

    Drain the pasta and pour into large serving bowl. Add the chopped vegetables, spinach leaves and salami and toss. Drizzle in the whisked vinegraitte and season with salt & pepper. Top with freshly chopped basil.

    Served immediately.
