Mascarpone Cheese Sauce

Ingredients:
  • ½ cup or one stick unsalted butter
  • ½ cup all-purpose flour
  • 4 cups whole milk
  • 2 cups half-and-half cream
  • 8 ounces mascarpone
  • Heat the butter in a large saucepan over medium heat. When melted add the flour and stir constantly until well blended. Whisk in the milk and cream with a wire whisk, whisking constantly to prevent scorching and to completely blend in the flour. Simmer uncovered until the sauce thickens - about 10 minutes

Remove from the heat and stir in the cheese. This sauce does not keep well and really needs to be served immediately.
