Easy Microwave Polenta

Cook time: 10 minutes



Ingredients:

  • 3 ½ cups of water
  • 1 cup polenta or coarse corn meal
  • 3 tbsp unsalted butter
  • 3 oz. Parmesan cheese
  • pinch of salt
  • Use a microwave cooking dish large enough to hold the polenta and water without boiling over. Combine the polenta and water and cook on the high setting for 5 minutes uncovered. After 5 minutes, stir the polenta then microwave on high for another 5 minutes uncovered.

    Remove the dish from the microwave and stir in 3 tablespoons butter and 3 oz of parmesan or asiago cheese - or flavor the polenta any way you would like. This polenta can be spread in a pan and chilled in the refrigerator.
