Panna Cotta

Panna Cotta (Italian for "cooked cream") is an Italian eggless custard. The light cream taste goes well with fruit sauces or chocolate sauce. The nice thing about this dessert is, since it needs to be chilled for at least a couple of hours, it can be made the night before making it a great dessert for entertaining.

Ingredients:

  • 2 cups whole milk
  • 1 package unflavored gelatin
  • 1 cup heavy cream
  • 1 ½ teaspoon vanilla pure extract (do not use imitation)
  • 1/8 cup sugar
  • Directions:

Pour 1 cup of milk into a large saucepan and stir in the gelatin. Allow the gelatin to sit and soften for 5 minutes.

Place the saucepan over low heat and stir frequently for 5 minutes until the gelatin has completely dissolved. Add the remaining milk, cream and vanilla. Turn heat up to medium and cook, stirring frequently, just until it starts to bubble but do not bring to a boil. Stir in the sugar until dissolved and remove the saucepan from the heat. Let the cream mixture cool for about 10 minutes while you prepare the ramekins.

Lightly spray 6 ramekins with cooking spray. Pour the cooled mixture and chill in the refrigerator for at least 2 hours, but can be left over night.
