Pizza Soup


Pizza Soup is a fun soup to try, especially if you don't want to go to the trouble of preparing and baking a pizza. Enjoy the great taste of pizza in a bowl to warm you up on those cold, winter evenings.

Ingredients:

  • 1/2 pound Italian sausage
  • 1 cup pepperoni -- chopped
  • 1 onion – chopped
  • 1 tsp fennel seeds
  • 1 chopped green pepper
  • 1 1/4 cup mushrooms -- chopped
  • 1 can (28 oz) diced tomatoes
  • 14 ounce jar of pizza sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon minced garlic
  • 2 cups water
  • 2 cup beef stock or broth 1/2 cup Parmesan Cheese or a piece of Parmesan cheese rind.
  • Shredded Mozzarella cheese
  • Italian Croutons
  • Directions:

    Cook the sausage in a large pot or dutch oven. When the sausage is almost cooked, add the chopped onions, fennel seeds and green peppers. Saute for a few minutes until the vegetables are soft. Add the next 8 ingredients and bring the soup to a boil, then turn down the heat and simmer for 15 minutes.

    When the soup is finished, spoon into oven safe bowls and top with the Italian croutons then sprinkle with mozzarella cheese. Place bowls in the oven and broil for 2 - 3 minutes until the cheese is bubbly and starts to turn golden.
