Ravioli Soup

Ravioli is not only great as a pasta dish, but it makes a delicious soup too. This soup makes a great lunch or dinner in the winter.

Ingredients:

  • 1 small onion, chopped
  • 1 tsp dried oregano
  • 1 tablespoon jarred minced garlic ( or 1 tsp garlic powder)
  • 1 can (14.5 oz) Italian style stewed tomatoes
  • 1 cup water
  • 2 cups beef stock – beef broth
  • 1 can 14.5 oz Cannellini, white or kidney beans
  • 1 package (9 oz) of fresh or frozen ravioli
  • Directions:

    Chop the onions and saute in a dutch oven in olive oil just until softened. Add the oregano and garlic and saute one minute more stirring frequently. Add the canned tomatoes with the liquid, beef stock and water. Drain the beans and add them and the ravioli. If using frozen ravioli, you will need to boil them longer than fresh. Bring the soup to a boil and cook the raviolis until tender but firm.

    When the soup is done, pour into bowls and top with freshly grated Parmesan cheese.
