Spaghetti with Garlic oil


Spaghetti with Garlic oil (spaghetti aglio e olio) is a simple, southern Italian dish. The key to this dish is to be sure you do not overcook the garlic which will make the dish bitter. You want to cook the garlic in the oil slowly so that it flavors the oil and be sure to remove the pan from the heat when the garlic starts to turn brown. If you are not experienced with cooking with fresh garlic, chop it in large pieces and it will be much easier to keep an eye on.

Ingredients:

  • 1 pound of dried spaghetti
  • 8 – 10 cloves of garlic, chopped
  • ½ teaspoon red pepper flakes
  • ½ cup olive oil
  • 2 tablespoons fresh Italian parsley, chopped
  • Salt and freshly ground pepper
  • Directions:

    Heat a large pasta pot and add the spaghetti when the water comes to a boil.

    Meanwhile, heat ½ cup of olive oil in a large skillet or saucepan. Add the chopped garlic and pepper flakes to the oil and cook over medium heat, stirring frequently. Be careful not to overcook the garlic and remove pan from the heat just as it starts to turn and toss in the fresh parsley.

    Drain the cooked spaghetti spoon into the garlic oil. Toss to coat, pour onto a platter and serve immediately.
