Strawberry Budini

Budini means pudding in Italian. The Italians enjoy simple desserts which often include fresh fruit. This makes a light, delicious treat that is good year round.

Servings: Four

Ingredients:

  • 2 pints of fresh strawberries sliced, save 4 whole strawberries for garnish
  • 1/3 cup sweet Marsala wine
  • 2 tablespoons light brown sugar
  • 1 - 8 oz container Mascarpone cheese
  • Whisk the Marsala and sugar in a bowl until the sugar melts. Slice the strawberries and stir into the wine and sugar mixture. Cover the bowl and chill in the refrigerator for a couple of hours. Stir occasionally to make sure all of the strawberries are covered.

    When the strawberries have chilled, fill 4 sundae or wine glasses with the Mascarpone cheese. Top with the strawberries and wine sauce and garnish with one whole strawberry and serve.
