Here is a recipe for polenta that does not require the traditional method of continuous stirring over the stove. Serve hot with your favorite tomato, meat or vegetable sauce. Makes 6 servings

  • 1 cup polenta (course grain corn meal)
  • 3 1/4 cups lukewarm water
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 1/4 cup freshly grated Parmesan cheese

    1. Preheat oven to 350°F.

    2. Combine all ingredients in a large bowl and mix well.
    3. Place all ingredients into a greased 8 x 8-inch baking pan.

    4. Bake, uncovered, for 50 minutes. Using a fork, stir mixture well and bake and additional 10 minutes. Remove from oven and sprinkle with cheese.
