These easy pasta recipes are great for busy weeknights when everyone is too busy and hungry to cook.

Homemade pasta is not difficult and one great thing about fresh pasta is it cooks very quickly. Another is you can flavor your pasta with just about anything you like but adding a few ingredients to your dough. Fresh homemade pasta can be make will a rolling pin, but a pasta machine makes the job much easier.

Italian pasta sauce is also easy to make, and since most freeze well, they are easy to have on hand. Some of these easy dinner recipes, like lasagna, also freeze well for a future dinner. I often make two lasagnas, one to bake and eat immediately, and one I seal in my Vacuum Sealer and freeze for later. This works great if you have a Pyrex baking dish than can go from freezer to oven or microwave. Just put the dish inside a large sealing back and vacuum. They last for months in your freezer.
