Italian Pasta Soup
This holiday, try making this Italian Pasta Soup in a jar. I'm sure you have seen those mason jars filled with cookie and brownie mixes that fill the stores at Christmas time. Well they
make great gifts because everyone loves food gifts at the holidays and what better than a gift you have made yourself. These food jar gifts are easy to make and I use my home grown
herbs,
but you can use store bought dried herbs if you did not grow your own. Buy some inexpensive canning jars before the holidays and make your own delicious Italian soup gifts this year. Everyone will love it!
This recipe makes enough for one (1 quart) jar.

Pour the pasta into a 1 quart canning jar. Add the next 8 ingredients and shake the jar to blend a little.
Place the Parmesan cheese in a small, air-tight bag or carefully wrap in plastic wrap then place on the top of the pasta. Place the seal and lid on the jar and twist tight. Cut a piece of Christmas colored cloth and place over the lid. Tie with a string or ribbon and attach the gift tag with the cooking instructions.

Remove the cheese packet from the jar.
Fill a large pot with 5 cups of water and bring to a boil. Add the contents of the jar and boil for 10 – 12 minutes until pasta is almost done. Add the canned tomatoes and frozen vegetables, reduce heat to medium and simmer for another 10 minutes until the pasta and vegetables are tender.
Pour into serving bowls and sprinkle with Parmesan cheese.
Makes about 4 servings.
