Easy and delicious homemade Italian Sauces and Pestos

Alfredo Sauce

Tossing pasta with a rich sauce or a fresh
pesto is one of the fastest meals you can make. Throw in some meat or seafood and you have a complete meal in minutes.

Sauces can be made in advance and most freeze quite well - with or without meat.

Pesto needs to be made with fresh herbs as dried herbs will not provide the same texture or flavor. Eat them fresh or keep frozen. Pestos are traditionally used as sauces for pasta or added to a bowl of soup for extra flavor, however, they can make a great spread for sandwiches or rubbing them on meat before cooking adds tremendous flavor.

Tip: To use pesto on leftover pasta, the trick is not to cook the pesto - especially in the microwave because it will zap out all of the flavor.
