Ladyfingers Recipe

Make your own Ladyfingers:

  • 1/3 cup flour
  • 1/3 cup cornstarch
  • 4 large eggs - separated
  • 2 tablespoons
  • Confectioner's (powdered) sugar for dusting
  • Directions:

    Preheat oven to 400˚F

    Line 2 baking sheets with parchment paper or a silicon baking sheet

    Use 2 large mixing bowls - sift flour and cornstarch together in one large bowl using a sifter or strainer, then sift them together again into the other bowl until thoroughly mixed.

    Separate the egg yolks and whites into separate bowls. Beat the yolks with 1/3 cup sugar with an electric mixer on high speed until they are light in color and thick – approximately 5 minutes.

    Whip the egg whites on medium speed until foamy. Add 1 tablespoon sugar and whip on high speed until stiff, then add the remaining tablespoon of sugar and whip for 30 seconds more.

    Gently fold the yolks into the egg whites. Then fold 1/3 of the flour mixture at a time into the egg mixture. You want to thoroughly incorporate the flour without deflating the egg mixture.

    Fill a large pastry bag using a plain ½ inch tip. Pipe the mixture into 3 inch strips onto your baking sheets.

    Bake for 8 -10 minutes until springy but not too brown.
